Tasting Notes: The wine features a highly ripe apricot and ripe mandarin on the nose at the beginning, followed by delicate meadow herbs and lime. It offers an ideal balance between acidity and subtle sweetness, with the herb meadow and lime notes coming to the forefront on the palate, culminating in a surprisingly long and mineral finish.
Vinification: The grapes were selectively handpicked into harvesting crates at the beginning of October, followed by a mash standing time of 12-14 hours. The fermentation process took place in stainless steel tanks at 19-20°C, with a subsequent 5-month fine lees aging.
Food Pairing: It is ideally paired with dishes like potato pancakes with guacamole, grilled sea fish, or non-spicy Asian wok dishes.
